This is the quickest dish in the world and I’m eating it every week at the moment. It’s also going to be one of the salads I serve on Christmas Day (how exciting!) Chickpeas and beans are in the legumes family which are good, slow burning carbs which will not give you an insulin spike but will release energy slowly.
1 tin chickpeas, drained and rinsed
1 tin white or cannellini beans, drained and rinsed
4 artichoke hearts, cut into quarters
Juice of 1 lemon
Glug of olive oil
Handful of parsley, chopped
Salt and pepper
Combine all the ingredients in a bowl. Break up the artichoke hearts as you stir as this makes the salad even yummier.
